Traditional cheese vs ultra-filtered cheese

Treatments applied to foods can degrade some of their nutrients, such as proteins, vitamins or minerals.

For this reason, Únicla fresh cheese is produced using a fully traditional system in which fresh milk is used without concentrating the protein. This is the most nutrient-friendly option and guarantees a totally different texture and flavour compared to fresh cheese using the ultra-filtration technique.

The curd is soft and light, the flavour milky and intense, even in the skimmed version. Fresh cheese is a source of nutrient-dense proteins, calcium and phosphorus. If furthermore it has been made with Únicla milk, the result is a fresh cheese that provides 33% of the recommended daily amount of selenium and with 2% less saturated fat and four times more omega 3 and CLA.
